We couldn't find desi Lahore food in Singapore. So we cooked it ourselves—with ethnic ingredients, chefs from Lahore and desi basics.

The Problem

Singapore's Pakistani food scene is limited: fragmented, pricey dine-in kebab joints or inauthentic, budget hawker stalls. Vegetarian options blur into generic curry copies. Lentils arrive watery—cooked for rice, not for scooping up with chapati. Pulao is served as "Nasi Biryani" and Biryani is called "Dum Biryani" (when every Lahori Biryani is dum by default). Prata is not the paratha our grandmas cooked.

Where was Lahore's famed food?

Where were the classic street snacks like Aloo Tikki, Chana Chaat, Dahi Bhallay and Gol Gappay (not Pani Puri)? The street omelette varieties cooked fresh? Parathas steaming with ajwain? Freshly kneaded and cooked chapatis on a traditional 'tawa' griddle? Mango lassi made from real Pakistani mangoes, yogurt and Himalayan salt?

We checked every platform. Ate from every "Pakistani" restaurant. Tried hawker fare. Nothing tasted like Lahore.

Then came the harder problem: sourcing. Real Lahori food demands real Lahori, 'desi' ingredients. Chana daal. Desi ghee. Sarson da saag. Lahori herbs. Singapore's supply chains didn't have them—not imported, not together, not accessible, not systematized.

The Breakthrough

We found real Lahori chefs. Not trained from recipes or YouTube. But raised in Lahore's homes, kitchens and streets. People who know this food in their bones. Multi-generational foodies.

Through them came access: the exact suppliers, the ingredient networks, the knowledge of what authentic (desi) truly feels, smells and tastes like.

Without this unlock, Lahori.SG wouldn't exist.
